Massimo Bottura dell’Osteria Francescana di Modena rimane al terzo posto della classifica del The World’s Best Restaurants.
Fra gli italiani Enrico Crippa di Piazza Duomo sale al 39° posto. Scendono, invece, al 46° posto Raffaele e Massimiliano Alajmo de Le Calandre di Rubano. Esce, seppur di un soffio, dalla classifica dei migliori 50 Davide Scabin che si piazza al 51° posto.
Nei primi 100 un solo Italiano: Dal Pescatore di Caneto sull’Oglio che si ferma al 90° posto.
The World’s Best Restaurants è organizzato dal 2003 dalla rivista inglese Restaurant ed é presentato in collaborazione con i più influenti ristoratori del mondo, i migliori chef e media internazionali.
William Drew, Editor di Restaurant ha dichiarato: “Siamo entusiasti di aver accolto ancora una volta i migliori chef del mondo a Londra per una notte di vera festa . È emozionante riuscire a valorizzare la forza dei più grandi talenti gastronomici in fermento in tutto il mondo.Lo stimolo per raggiungere nuove vette gastronomiche continua a crescere e siamo onorati di giocare un ruolo in questo processo.”
La classifica viene stilata ogni anno da un influente gruppo di oltre 900 leader internazionali nel settore della ristorazione. Tale gruppo fa riferimento a 26 distinte regioni del mondo, ognuna delle quali conta 36 membri ciascuno dei quali disporre di sette voti. Di questi sette, almeno tre devono essere desinati a ristoranti al di fuori della regione di appartenenza del membro votante. Il panel in ogni regione è costituito da critici gastronomici, chef, ristoratori e gastronomi scelti per la loro visione ed esperienza internazionale . I votanti elencano le proprie scelte in ordine di preferenza, basata sull’esperienza nei ristoranti di tutto il mondo visitati nei 18 mesi precedenti il voto. Non esiste una lista di criteri predeterminata. Il giudizio fa riferimento a ciò che il ristorante sa esprimenre a 360° gradi in termini servizio, accoglienza, ambiente, filosofia di cucina. » red
